I bought a pasta machine for my boyfriend for his birthday, and we decided to test it this weekend. Neither of us had made pasta before, but we had eagerly watched tv chefs do it. As we both love chilli, we decided to make chilli-feta ravioli.
In the dough we used 300 g of flour (4½ dl) and 3½ normal sized eggs.
I kneaded the dough for about 10 minutes, after which we let it rest in cling film for about half an hour.
My boyfriend worked the pasta machine and made two thin strips (they could have been even thineer, we noticed afterwards, but worked well still). It's good to use quite a lot of flour at this point to prevent the dough from sticking. Practice makes perfect, like in everything you do.
We placed the chillis and the feta cheese on one pasta strip, brushed the sides with water and then pressed the other strip on top.
Then we cut the pieces and put them in boiling water.
The ravioli tasted yummy, a lot better than regular dry pasta. Next we plan to make pasta sheets for lasagne.
